
The unicorn food trend is everywhere, and honestly, I love it. From hot chocolate and cakes to milkshakes, there’s no shortage of colorful treats — but we couldn’t find a unicorn blondie sundae, so we made one. Picture pink blondies, layered rainbow ice cream, and a generous sprinkle of candy and confetti. It’s the perfect birthday dessert, an over-the-top treat that’s as fun to serve as it is to eat.
We made two versions: a regular-sized sundae and a show-stopping super-sized version for celebrations when you want to go big.


Unicorn Brownie Sundaes

Ingredients
- Rainbow Ice Cream:
- 2 cups heavy cream, cold
- 1 (14 oz) can sweetened condensed milk
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- Pink Blondies:
- 2 sticks unsalted butter, room temperature
- 1/3 cup white chocolate chips
- 4 large eggs, room temperature
- 1 1/2 cups granulated sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- Food coloring (pink and other colors for ice cream layers)
- Toppings:
- Lollipops
- Candy necklaces
- Sprinkles
- Colorful marshmallows
- Sixlets or other small candy
Instructions
- For the ice cream: Whisk the cold heavy cream until stiff peaks form, using a stand mixer or by hand.
- Fold in the sweetened condensed milk, vanilla, and salt until fully combined.
- Divide the mixture evenly into several small bowls. Tint each bowl with desired food colors (neon pink, orange, yellow, green, turquoise, baby blue, purple, etc.), leaving one bowl white.
- Layer spoonfuls of each color and the white into a freezer-safe container with a lid. Gently tap the container to settle the layers and remove air pockets.
- Continue layering until all the mixture is used, cover, and freeze overnight.
- For the blondies: Preheat oven to 350°F (175°C). Grease a 9 x 13-inch baking dish.
- Melt the butter in a small saucepan over medium heat. Add the white chocolate chips and whisk until smooth and fully melted. Remove from heat and let cool slightly.
- In a stand mixer fitted with the whisk attachment, combine the eggs, sugar, and vanilla. Whisk on medium speed until light and fluffy, about 2 minutes.
- Add the butter and white chocolate mixture to the egg mixture and mix until combined. Fold in the flour and salt gently until the batter is uniform.
- Pour batter into the prepared pan and bake 30–35 minutes. Allow to cool, then cut into squares.
- To assemble the sundae: Arrange two blondie squares on a plate, top with several scoops of rainbow ice cream, add whipped cream, then finish with sprinkles and assorted rainbow candies.

The oversized version is meant to be dramatic — perfect for a party where you want an all-out centerpiece dessert. Top it with extra sprinkles and candy for maximum impact. If you want bright, custom sprinkles, specialty shops sell curated mixes that work wonderfully with this recipe. For colorful ice cream layers, use gel food coloring for vivid hues or follow tips for making bright natural food coloring if you prefer natural dyes.
