White Chocolate Cranberry Ice Cream Pops Recipe

White Chocolate Cranberry Popsicles
Hello! Brittni here from Paper & Stitch, filling in while Kelly enjoys some well-deserved time off for her wedding.

With Thanksgiving coming up, I wanted to share a simple dessert that makes use of ingredients you might already have on hand after the big meal. If you’re making cranberry sauce, save a bit for these white chocolate cranberry ice cream pops. They’re refreshingly tart and sweet at once — and even if you’re not a huge cranberry fan, these popsicles might change your mind.White Chocolate Cranberry Popsicles

Ingredients:

Homemade cranberry sauce (made from one 12 oz package of cranberries)
1/4 cup sugar
5–6 medium scoops vanilla ice cream, thawed slightly
1 cup white chocolate chips

Instructions:

1. In a mixing bowl, combine the cranberry sauce and sugar and stir until smooth. Fold in about half of the white chocolate chips and reserve the rest for later.
2. Add the thawed ice cream to the bowl and stir. Let the ice cream soften fully so it blends easily.
3. Transfer the mixture to a blender and blend until smooth — smoothie mode works well if your blender has it.
4. Pour the blended mixture into popsicle molds. While filling, sprinkle in the remaining whole white chocolate chips. Insert popsicle sticks and freeze for about 4 hours, or until completely solid. The mixture is slightly thick, so the sticks should stand upright without issue.
5. To remove the popsicles, briefly run the molds under warm water for 15–20 seconds and gently pull the popsicles free.

This slightly tart, slightly sweet treat is a great light dessert when you don’t want something overly rich. It’s perfect after Thanksgiving dinner — once you’ve recovered from the turkey coma — and delightful any time during the season.
