Colorful Rainbow Cannoli Recipe for Festive Desserts

I say “holy cannoli” a lot, but today I really mean it: holy rainbow cannoli. I had a playful idea to colorize cannoli for St. Patrick’s Day—melding Irish and Italian influences into one colorful treat. Full disclosure: I’d never deep-fried anything before this project, so I recruited my talented friends at Garlic My Soul to help. One Sunday we gathered in the kitchen: they handled the frying while I managed the colors, the sprinkles, and taste-testing.

In short: prepare your favorite cannoli dough, divide it into six equal portions, and tint each portion with food coloring to form the rainbow shades. Roll, shape, and fry the shells as you normally would, then cool them before filling.

To finish, we added candy-coated chocolate chips to the ends for a bright, polished look. Regular sprinkles work equally well and offer a lighter texture. Fill the shells with a classic ricotta or mascarpone-based filling, pipe the filling into each end, and press the chips or sprinkles gently into the filling so they stick.
