
I didn’t forget about July 4th! Remember those red, white, and blue ice pops you used to (or still do) gobble up in summer? Tic Tac recently released a mint flavor that tastes remarkably like those nostalgic pops—so good we sampled several boxes just to be sure. Inspired by that classic flavor, I reinvented my popsicle cakes to make festive summer ice pop cakes that are perfect for the Fourth of July. They’re simple, fun, and guaranteed to be a hit.


Supplies you’ll need:
– Your favorite sheet cake (I used a vanilla sheet cake recipe; one cake makes three small popsicle cakes or you can make one large cake)
– Your preferred buttercream (one batch covers about eight small cakes)
– Red and blue food coloring
– Cardstock and scissors for a template
– Popsicle sticks
– Icing spatula and a sharp knife
– Tic Tacs and ice pops for “research” and edible confetti


Steps to make the cakes:
1. Create a template: Find a popsicle image or draw a simple popsicle shape on cardstock and cut it out. Chill the sheet cake in the refrigerator to make cutting easier. Place the template on the cake and carefully cut around it with a sharp knife to form each popsicle-shaped cake. Repeat for as many cakes as you want, then return them to the fridge or freezer to firm up.
2. Prepare the frosting: Divide your buttercream into three bowls. Tint one portion blue and one portion red, leaving the middle portion white.
3. Frost the cakes: Work patiently in sections. Start with the bottom blue layer—place a dollop of blue frosting and smooth it across the bottom portion, covering the sides as needed. Use the cut shape’s natural indents to guide where one color should end and the next begin. Wipe your spatula as needed. Next, frost the white middle section the same way, then finish with the red top section. Take your time to keep clean lines between colors.
4. Add the stick and serve: Insert a popsicle stick into the bottom of each cake. To transfer cakes from the cooling rack to a plate, slide a spatula carefully underneath and lift. Arrange the cakes on a tray and add Tic Tacs as edible confetti for a playful finish.
