
Summer isn’t over until we say it is. Determined to keep the sunny days going, I teamed up with the fun crew at Garlic My Soul to create a popsicle that screams celebration: Funfetti Creamsicles. These are creamy, citrusy, and studded with colorful sprinkles for a joyful crunch. My role was mostly taste-testing extra sprinkles and arranging a few orange slices for photos, but the recipe and photos come from our friends at Garlic My Soul.

Funfetti Creamsicles
Recipe by Garlic My Soul
Makes 6–8 creamsicles, depending on your molds.
Ingredients:
½ cup fresh orange juice (about 2 oranges)
½ cup coconut cream
½ cup milk (dairy or plant-based)
Sugar or honey, to taste
½ cup sprinkles
Directions:
1. Juice your oranges. Tip: Cut oranges lengthwise rather than crosswise to yield more juice.
2. Whisk together the coconut cream and milk until smooth and creamy.
3. Stir the orange juice into the creamy mixture and taste. Sweeten gradually with a tablespoon of sugar or honey at a time until you reach the desired balance — remember the sprinkles will add extra sweetness and color.
4. Fold in the sprinkles, mixing gently to distribute them through the mixture.
5. Pour the mixture into your popsicle molds. Sprinkles tend to settle, so use a spoon to nudge them into each mold for an even appearance.
6. Freeze overnight until fully set. Pop out and enjoy a bright, creamy treat for an afternoon refresher.
These Funfetti Creamsicles combine creamy coconut, bright orange, and playful sprinkles for a nostalgic yet refined frozen treat. They’re simple to make, customizable (try different juices or milk alternatives), and perfect for squeezing a little more summer into your day.
