
It’s National Creative Ice Cream Flavors Day, and with July 4th approaching on Saturday, we created a playful twist on a classic treat: Pop Rocks ice cream sandwiches. These colorful, popping desserts add a surprising, fun element to any holiday gathering and are especially popular with kids.


To assemble these treats, pour a few packages of Pop Rocks onto a shallow dish. Use your favorite ice cream sandwiches—homemade or store-bought—and roll the exposed ice cream edges in the Pop Rocks so they adhere evenly. Place the finished sandwiches back in the freezer for a short time to ensure the Pop Rocks stay intact until serving. We used pre-made sandwiches from a local creamery and finished ours with a sparkler shaped like the number 4 for a festive touch.

These Pop Rocks ice cream sandwiches are an easy, showstopping addition to backyard barbecues and holiday parties. The bright colors and popping texture make them memorable—and they require minimal prep. Serve them straight from the freezer and watch guests light up when the popping begins.
