It’s National Creative Ice Cream Flavors Day, and with July 4th approaching on Saturday, we created a playful twist on a classic treat: Pop Rocks ice cream sandwiches. These colorful, popping desserts add a surprising, fun element to any holiday gathering and are especially popular with kids.

To assemble these treats, pour a few packages of Pop Rocks onto a shallow dish. Use your favorite ice cream sandwiches—homemade or store-bought—and roll the exposed ice cream edges in the Pop Rocks so they adhere evenly. Place the finished sandwiches back in the freezer for a short time to ensure the Pop Rocks stay intact until serving. We used pre-made sandwiches from a local creamery and finished ours with a sparkler shaped like the number 4 for a festive touch.
