Ingredients

  • 13 x9 Cake Use a boxed mix or your favorite from-scratch recipe
  • For the Buttercream Frosting:
  • 1 cup softened butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons milk
  • Food coloring brown, orange, yellow, red
  • For the Royal Icing (pepperoni):
  • 3 tablespoons meringue powder
  • 4 cups powdered sugar
  • 5 tablespoons warm water
  • Red food coloring

Instructions

  • Frosting: In the bowl of a stand mixer fitted with the paddle attachment, cream the butter until smooth.
  • Add the powdered sugar, vanilla, and milk. Mix on low until combined, then increase to medium and whip for about a minute.
  • Divide the buttercream into bowls and tint: yellow for the “cheese,” red for the “sauce,” and a pale tan for the “crust.”
  • Royal icing pepperoni: Combine the meringue powder, powdered sugar, and warm water in a mixer. Beat on medium-high for 7–10 minutes, then add red food coloring.
  • Transfer the royal icing to a piping bag fitted with a medium round tip. On parchment paper, pipe many 1-inch red circles. Allow them to harden, then peel them off gently.
  • Assemble the cake: Trim a 13 x 9-inch baked cake into a large triangle using a long, sharp knife.
  • Apply a pale tan buttercream to cover the whole cake. Start with a thin crumb coat and chill for about 30 minutes, then add a second smooth coat.
  • Spread the red buttercream over the top and slightly down the sides to mimic tomato sauce, leaving the crust exposed in the dough color. Chill briefly.
  • Pipe or spread the yellow buttercream to resemble cheese, allowing some red “sauce” to show around the edges for a realistic look.
  • Add a touch of darker brown buttercream to the crust for dimension if desired.
  • Finish by topping the cake with the hardened royal icing pepperoni. Slice some pepperoni in half to place along the slice’s edges for a natural look.
