Funfetti Twinkies: Colorful Sprinkle-Stuffed Snack Cakes

We compiled a list of recipes to create and share, and many of them involved funfetti. So we embraced it and launched a whole Funfetti series — Funfetti-fied! To kick things off, we recreated a classic: Twinkies. These funfetti Twinkies are colorful, nostalgic, and surprisingly simple to make at home.

For the cake:

3/4 cup butter
1/2 cup sugar
3 eggs
1 1/2 cups cake flour
1/2 cup heavy whipping cream
2 teaspoons vanilla extract
1/3 cup confetti sprinkles
A Twinkie pan

For the filling:

3/4 cup softened butter
2 cups powdered sugar
1 teaspoon vanilla extract
1 to 3 tablespoons milk (to reach desired consistency)
1/4 cup confetti sprinkles

Note: This recipe uses a buttercream-style filling to keep the funfetti theme. For a more traditional marshmallow-style Twinkie filling, substitute with a marshmallow-based recipe.

1. Preheat the oven to 325°F (160°C).
2. Cream the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition.
3. Combine the heavy whipping cream with the vanilla extract.
4. Add the cake flour and cream alternately to the butter mixture, beginning and ending with the flour. Scrape the bowl and mix just until combined. Gently fold in the confetti sprinkles.
5. Butter and flour your Twinkie pan. Fill each mold about three-quarters full with batter.
6. Bake on the middle rack until set and very lightly browned, about 15 to 25 minutes depending on pan size and oven. The bottoms may puff up; trim any excess once cooled. Allow the cakes to cool slightly in the pan, then remove and cool completely on a wire rack.
7. For the filling, cream the softened butter in the bowl of an electric mixer until light. Add the powdered sugar on low speed until combined, then add the vanilla and enough milk to reach a smooth piping consistency. Fold in the sprinkles.
8. Transfer the filling to a piping bag fitted with a medium round tip.
9. To assemble, gently insert the piping tip into the bottom of each cake and squeeze a small amount of filling into two or three spots to distribute the cream evenly.
