Ingredients

  • Strawberry Simple Syrup:
  • 1 cup sugar
  • 1 cup water
  • 1 pint strawberries, stems removed and sliced
  • Red food coloring (a few drops to brighten color)
  • Pineapple Simple Syrup:
  • 3/4 cup sugar
  • 1 cup water
  • 1 cup crushed pineapple (juice included)
  • Yellow food coloring (a few drops to brighten color)
  • Blue Simple Syrup:
  • 1 cup sugar
  • 1 cup water
  • Blue food coloring
  • 1 teaspoon all-natural blueberry extract (for a true bright blue)
  • Note: You can use fresh blueberries for the blue syrup, but the color will be purple. For a vivid blue, combine blueberry extract with blue food coloring.

Instructions

  1. Strawberry simple syrup: In a small saucepan combine 1 cup sugar and 1 cup water. Bring to a boil and cook just until the sugar dissolves. Remove from heat, add the sliced strawberries, and let steep at least 30 minutes (or up to 8 hours) for more flavor. Strain through a fine-mesh sieve, stir in a few drops of red food coloring if desired, cool completely, and refrigerate.
  2. Pineapple simple syrup: In a small saucepan combine 3/4 cup sugar and 1 cup water. Bring to a boil and cook until sugar dissolves. Remove from heat, add crushed pineapple (including juice), and let steep at least 30 minutes (or up to 8 hours). Strain through a fine-mesh sieve, add a few drops of yellow food coloring if desired, cool completely, and refrigerate.
  3. Blue simple syrup: In a small saucepan combine 1 cup sugar and 1 cup water. Bring to a boil and cook until sugar dissolves. Remove from heat, stir in 1 teaspoon blueberry extract and a few drops of blue food coloring for a bright hue. Cool completely and refrigerate.

They were delicious! Of course you can use store-bought syrups, but making your own lets you control flavor and color — and it’s worth trying the simple syrups above if you want a homemade, vibrant treat.

We have one more pool party DIY post coming later this week — and yes, it also involves ice!
