Chocolate Cookie Waffle Pops Recipe for Kids and Parties

I’ve always loved desserts that double as breakfast, so when we partnered with International Delight to try their new OREO® cookie flavored creamer, I was excited. The aroma alone brings back those classic OREO® dunking memories, and now you can simply pour that flavor into your coffee.
We also made chocolate cookie waffle pops flavored with the creamer — they’re delicious and surprisingly easy. They’d be great at a party where guests decorate their own, or on an ordinary weekday when you want a fun treat. Below is the recipe and how to make them.

We used the OREO® creamer in both the waffle batter and the icing to give these waffle pops an authentic cookie flavor.

Ingredients

  • 1 cup flour
  • 1/4 cup cocoa powder
  • 1/4 cup brown sugar packed
  • 1 teaspoonful baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs separated
  • 1 cup International Delight OREO® creamer
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3 ounces milk or semi-sweet chocolate roughly chopped
  • Nonstick spray
  • Large popsicle sticks
  • 2 cups powdered sugar
  • 3 tablespoons International Delight OREO® creamer
  • 3 tablespoons International Delight French Vanilla creamer for white icing
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk together the flour, cocoa powder, brown sugar, baking powder, baking soda, and salt.
  2. Combine the egg yolks, International Delight OREO® creamer, vegetable oil, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and mix until combined.
  4. Using an electric mixer, beat the egg whites until medium peaks form. Gently fold the egg whites into the batter.
  5. Fold in the chopped chocolate until evenly distributed.
  6. Heat the waffle iron on high and spray with nonstick spray. Place about 1/4 cup of batter in an oval shape on each quarter of the waffle iron. Lay a popsicle stick on top and cover the stick with a little more batter. Close the waffle iron and cook 2–3 minutes. Transfer cooked waffles to a wire rack to cool.
  7. To make the icing, combine powdered sugar, International Delight OREO® creamer, and vanilla extract. Whisk with an electric mixer until smooth.
  8. Drizzle icing over the waffle pops and add sprinkles or other toppings as desired.
