
National Ice Cream Day may have just passed, but ice cream season is still in full swing. To celebrate, here’s an easy, playful treat: ice cream sandwich donuts. They combine the nostalgia of classic ice cream sandwiches with the fun shape and toppings of a donut, and they’re simple to make with store-bought ingredients or customized if you prefer to make everything from scratch.

Supplies & Ingredients
– Ice cream sandwiches (store-bought or homemade)
– A small biscuit cutter or cookie cutter with a 3/4″ center piece
– Chocolate chips, white chocolate chips, or candy melts for coating
– Sprinkles for decoration
– A spoon for drizzling
Instructions
1. Keep the ice cream sandwiches in the freezer until you’re ready to work with them. Working quickly in small batches will help them stay firm.
2. Remove a couple of sandwiches at a time. Use the small cutter to remove the center circle from each sandwich, creating a donut shape. Immediately return the cut sandwiches to the freezer so they firm back up.
3. Melt your chocolate chips or candy melts according to package directions. Take a few of the chilled donut-shaped sandwiches out of the freezer and drizzle the melted chocolate over them with a spoon. Add sprinkles right away so they stick. Return finished sandwiches to the freezer to set.
4. Remove the ice cream sandwich donuts just before serving and enjoy.
