To make these, I cut a popsicle template from cardstock and used it as a guide for trimming the cake. Chilling the cake in the refrigerator before cutting makes the process much easier and cleaner. After cutting each popsicle shape, I applied a thin crumb coat of frosting and chilled the pieces again to set the crumb coat. For the final decoration I tinted frosting in several colors and smoothed on patterns using just the edge of an icing spatula — no advanced piping skills required. As a finishing touch I inserted small decorative popsicle sticks into each cake for a playful look.
