A brookie is a delicious hybrid of a brownie and a cookie, baked together into a single bar. In this version, whole Oreo cookies are sandwiched between a cookie dough base and a thin brownie layer for extra texture and flavor.

Oreo Brookie Recipe Ingredients

Gather these simple ingredients:

  • Boxed brownie mix plus any ingredients the package calls for (eggs, oil, etc.).
  • Pre-made chocolate chip cookie dough (or your favorite homemade dough).
  • Oreos — double-stuffed works great.
  • Circus animal cookies — optional, to press on top for a fun look.
  • Nonpareil rainbow sprinkles — optional, for color and crunch.

How To Make Oreo Brookies

These brookies are simple to assemble and great for baking with kids. Keep the brownie layer thin so the bars bake through evenly.

Steps:

  1. Preheat oven to 350°F. Line an 8×8-inch pan with parchment paper.
  2. Press cookie dough into a 1/4-inch layer on the bottom of the pan.
  3. Arrange Oreos in an even layer over the cookie dough. If you’re using circus animal cookies, you can tuck a few into gaps.
  4. Prepare brownie batter according to the boxed mix instructions.
  5. Pour a thin layer of brownie batter over the Oreos—just enough to cover them. A thin layer bakes more reliably than a thick one.
  6. Top with sprinkles if desired.
  7. Bake 30–35 minutes, or until a toothpick in the brownie layer comes out clean. Baking time varies with layer thickness.
  8. Optionally, press circus animal cookies on top while the brookies are warm so they stick. Let cool, cut into squares, and serve.

How To Store Brookies with Oreos

Store brookies at room temperature in an airtight container for 3–5 days. Refrigerated, they’ll keep for over a week. Warm briefly in the microwave for a few seconds if you want that fresh-baked, gooey texture again.

Ingredients

  • Boxed brownie mix (plus ingredients per package instructions such as eggs and oil)
  • Double Stuff Oreos
  • Chocolate chip cookie dough
  • Circus Animal Cookies (optional)
  • Nonpareil rainbow sprinkles (optional)

Instructions

  • Preheat oven to 350°F. Line an 8×8-inch square nonstick pan with parchment paper.
  • Spread chocolate chip cookie dough into a 1/4-inch layer on the bottom of the pan.
  • Place Oreo cookies in an even layer on top of the cookie dough. Fill gaps with circus animal cookies if using.
  • Mix up the brownie batter according to the box directions. Pour a thin layer over the Oreos so they are just covered. Add sprinkles if desired.
  • Bake 30–35 minutes. Use a toothpick to check the brownie layer; timing depends on how thick your layers are.
  • When the brookies come out of the oven, press circus animal cookies on top if you like so they stick. Let cool slightly, then cut and enjoy.

Notes

  • Keep the brownie layer thin over the Oreos so the bars bake evenly. A thick brownie layer will need much longer to cook through.
  • Store-bought cookie dough is convenient and works perfectly, but homemade dough is also fine.
